I’m taking an 18 hour running coach certification program this weekend, it is being given by the Road Runners Club of America, and I am so excited! But it will be a long weekend. I had lots to do today, so I took a 2 1/2 mile walk this morning followed by breakfast – apples, dates and almond butter.
Then I had lunch at Noodles & Co. – Bangkok Curry bowl with tofu.
I made a quick dinner, a whole wheat tortilla with lettuce, tomato, black beans, corn and avocado. I am the worst burrito maker ever! I can never make it look right and it always falls apart. Chipotle wouldn’t hire me that’s for sure.
I stopped at Trader Joe’s to stock up on produce, and got some snacks to bring with me this weekend. The running club is providing food, but I am sure it won’t be vegan, so I am packing all of my own.

Trader Joe’s has a LOT of vegan items. I made my own trail mix from dried cranberries, chocolate chips, coconut chips and lightly salted whole almonds.
I thought I would take a photo of my measuring cups and spoons – I have lots of them. I don’t know how anyone functions with just one set, that would be crazy. I have a lot of 1/4 and 1/2 cup measuring cups that I ordered on the internet because I couldn’t find single measuring cups in a store and those are the ones I use most often.
