Friday and Saturday were busy days for me. Friday was a rest day, so no workouts. But I did eat lunch at work – I took one of my pre-portioned containers of Chicken Black Bean Chili out of the freezer and heated it up at work, added some 2% colby jack cheese and a dollop of greek yogurt.
I left work a little early, and treated myself to a frozen margarita made in the Vitamix. The Vitamix makes amazing frozen drinks, it does an incredible job of pulverizing ice cubes.

The problem with rest days is that I can’t eat much during the day. 1200 calories doesn’t go far! I only had about 200 calories left after the margarita (but it was worth it), so I made a spinach and mushroom egg white scramble. First saute the mushrooms and spinach in a skillet sprayed with nonstick cooking spray.
Some seasoning (Trader Joe’s Everyday Seasoning):
Add the egg whites and cook while stirring gently.
I ate a whole wheat bagel thin on the side.
Definitely not gourmet, but it will do.
Saturday morning I got up bright and early to run with my Galloway group. I was anxious because last week we did 6 miles and this week we were going to do 8 miles. Luckily it was a cool morning with low humidity. Our usual pace group leader, Christine, wasn’t there, but Floyd led our group. Floyd was great, and I did finish the 8 miles at a pace of 12:28. Nine of us started out running with Floyd, and only 5 of us finished at that pace. The last two miles I was definitely out of endurance, I couldn’t talk and I would have been very happy to stop at the end of the 7th mile.
Next week the schedule has us running 11 miles, which I thought was crazy. Floyd told me and another woman in the group that we do not have to do 11 miles because we are only training for 10 milers or a half marathon, not a complete marathon. So I’ll probably do another 8 next week.
When I got home I wasn’t very hungry, but I knew I needed to eat a little something. (I always have a protein shake in the car after long runs.) I had a small bowl of granola with soy milk.
And I still hadn’t gone to the grocery store, so I decided to get lunch at Subway. I haven’t been to a Subway in so long, and now that they post the calorie counts on the menu it makes ordering much easier. I got a Teriyaki Chicken sandwich on whole wheat with lettuce, tomatoes, cucumbers and spinach. I took it to the pool with me for lunch, which may have been a mistake – this was a messy sandwich.
I took a nice nap at the pool, went to the grocery store finally, then made a couple of things to take to our friends’ house for dinner. A salad:

Our friends were grilling steaks, which I don’t eat, but they very nicely grilled me a piece of arctic char which was delicious. We also had fruit salad, roasted red potatoes and bread with real butter. Oh, and a lot of wine. Oops, a little too much. It was a full day!
