- 6 ripe tomatoes, quartered
- 1 jalapeno pepper, sliced in half, take out seed and ribs
- 1/2 medium onion
- handful of fresh cilantro or parsley
- 1 t lemon juice
- Salt and pepper to taste
1. Combine jalapeno, onion, cilantro or parsley and lemon juice with 2 of the quartered tomatoes in the Vitamix blender (you can also use a food processor, or chop by hand).
2. Add the remaining tomatoes, and blend just until chunky.
3. Add salt and pepper.
